GF SODA BREAD

CRISPY ON THE OUTSIDE, SOFT ON THE INSIDE

We asked our bakers for a super easy gluten-free soda bread recipe. Soda bread is a quick bread that does not require any yeast. Instead, all of its leavenings comes from baking soda and buttermilk.

 
 

METHOD

  1. Heat oven to 200C/180C fan. Mix together the flour, salt and bicarb in a bowl. And if you’d like rosemary bread, add some chopped rosemary here.

  2. Mix together the milk and lemon juice in a jug, and wait for a minute as it magically turns into buttermilk. Then stir in the honey, and simply pour it into the flour mixture.

  3. Stir it with a knife for a minute until the whole thing comes together into a sticky dough. Tip onto a floured work surface and shape it into a ball.

  4. Put the ball on a floured baking tray and, using a sharp knife, make a deep cross on top. Put in the oven and bake for 40 mins.

  5. Cool on a wire rack, then slice and serve.

recipe tips from the pros:

  • Don’t over-work the dough. It’s supposed to look a little shaggy.

  • Score the top of the dough with an “X” before baking. This helps the centre bake through.

  • You can bake soda bread on a baking sheet, in a baking pan, or in a cast-iron skillet/pizza stone. We recommend a cast-iron skillet/pizza stone because it helps guarantee a super crispy crust.
